The Easterly | St. Thomas is a waterfront dining oasis offering innovative craft cocktails and wood-fired cuisine representative of the rustic Caribbean. The menu is ocean-to-table focused, and utilizes locally grown produce and local flavors to compliment the dishes. The Easterly offers one of the Virgin Islands most robust beverage programs with unique handcrafted cocktails, twists on Caribbean favorites, and an extensive list of craft beers & wine. Tucked away in an oasis of palm trees and rich greenery, the restaurant exudes a Bohemian-island vibe, and offers a social, vibrant and interactive dining experience.

THE OPPORTUNITY

Ballast Hospitality is seeking a Wine Director that is responsible for creating remarkable experiences and exceptional hospitality for our guests. The ideal candidate will oversee the wine programming for all Ballast Hospitality concepts, while also serving as a Sommelier & Bartender/Server at The Easterly [St. Thomas]. They are the wine expert of the Ballast Hospitality and is responsible for guiding our concepts, frontline service teams and guests to industry-leading, curated wine programs while ensuring proper service of wine is maintained to company standards. The Wine Director will create and maintain wine programs that inspire and satisfy guests.

The Wine Director supports our General Manager at The Easterly & our Corporate Beverage Director at our current USVI and US concepts to accomplish departmental goals, strategies, and objectives. They assure quality products, maximize guest satisfaction and maintain budgetary key performance indicators.

THE INDIVIDUAL

The ideal candidate is experienced, well-rounded, and hands-on. We are searching for an energetic, highly motivated individual who has previous sommelier experience in multi-level dining and high-volume restaurants. This individual should have a passion for wine and people with a strong ability to sell.

Alongside the management team, the individual will curate wine lists for all Ballast Hospitality concepts, determine how the wines are priced, maintain inventory and educate the frontline staff on how to sell & present the wines. They must have a solid understanding of managing costs, upholding menu standards, wine pairings and controlling inventory.

The ideal candidate is a practiced problem solver, maintains a calm demeanor under pressure, persists to get the job done, and enjoys coaching and working alongside a large team to improve performance and increase retention. They help lead the successful FOH operations and create an environment of fun, warm and relaxed hospitality. The right person will have excellent interpersonal skills to build rapport with employees and guests and be energetic and passionate about the restaurant industry with the ability to manage and inspire staff. They thrive in a fast-paced environment and understands what it takes to succeed in a dynamic restaurant. This person must have experience managing wine programs.

RESPONSIBILITIES

  • Develop and maintain the wine program for all Ballast Hospitality concepts.
  • Inspire and lead an inclusive wine culture that increases sales and profit margins.
  • Educate, train and serve as a point of knowledge for employees regarding wine varietals, regions, and service.
  • Lead the FOH staff in the successful operation of service while embodying the restaurants values and culture.
  • Assist in maintenance of inventory, invoices, and statements as they pertain to the wine & beverage program at The Easterly.
  • Administration can include updating all wine lists, invoicing, ordering, inventory, meeting with suppliers, and reporting.
  • Responsible for achieving financial targets with respect to wine sales; make every effort to achieve financial goals of cost of goods sold and inventory levels.
  • Organize and conduct regular education classes for staff both in-person and remote focusing on wine knowledge.
  • Create lasting relationships and mutually beneficial relationships with wine vendors.
  • Demonstrate integrity in all areas, both personal and professional. Instill trust and dependability among staff, always working with a team mindset and from a place of respect.
  • Ensure that all administrative duties, end-of-period reporting, inventories and forecasts are completed accurately and on time.
  • Ensure all wine-related menu changes are executed with proper communication & training to staff and management prior to print.
  • Perform other duties and responsibilities as required or requested.
  • Welcome guests into our home, get to know them and treat each and every guest like a VIP.
  • Performing opening and closing duties to standards required.
  • Completing regular deep cleaning of the restaurant.
  • Setting up and detailing the dining room and stations to standards required.
  • Maintaining water levels of guest.
  • Mark, clear and reset according to the pacing of the menu.
  • Cleaning and polishing silverware and glassware.
  • Effectively communicating service irregularities to management.
  • Maintaining the table.
  • Assisting in bathroom checks.
  • Provide knowledgeable, approachable, efficient, energetic, and thoughtful service at all times.
  • Full knowledge of food and beverage menu items including the major components of a dish/drink; this may include ingredients and their source, simple descriptions of unfamiliar ingredients, preparation, and/or execution of correct food and beverage service.
  • Maintaining cleanliness of the restaurant.
  • Adhere to grooming and dress code standards

QUALIFICATIONS

  • Court of Sommelier or WSET Certification
  • Self-discipline, initiative, leadership ability, outgoing nature
  • Exceptional communication skills
  • Strong computer skills
  • Food and wine pairing knowledge
  • Budget/cost analysis experience
  • Profit and loss management experience
  • Minimum 2+ years of experience in a supervisory position at a full-service, high-volume, casual or fine-dining restaurant
  • Ability to work flexible hours, including nights, weekends, and holidays as needed.
